1/2 Cup Almond Milk
1/4 Cup Organic Coconut Oil
1 Cup Creamy Peanut Butter
1 Teaspoon Vanilla
2 Cups Raw Sugar (or your favorite sugar substitute)
3 Cups Rolled Oats
1. In a large saucepan, mix sugar, soy milk, vanilla, and coconut oil. Bring to a full, rolling boil over medium heat. (FYI: Full, rolling boil means large bubbles are rising to the surface and can not be stirred down).
2. Boil for one minute while stirring constantly.
3. Remove from heat. Quickly stir in peanut butter until fully melted before adding the oats.
4. Form into balls and place on wax paper to cool.
This is so healthy (aside from the bit of sugar) it could practically count as lunch in a pinch. J
